I looked at a lot the postings here, plus I've tried to google alot and read docs. Im still real confused about the specifics of how set the system to all around learn mode. Any pointers would really help.

There is explanation of learning mode.
Sample configuration can be find in tar.gz of gradm.

http://www.gersecurity.net you mean? .org doesn't seem to exist.
